Legal Question in Family Law in Texas

If spouse does not turn in papers for inventory to court when ordered by due date, what is my legal move if he did not meet deadline?

You can either file a motion to compel or enforce the order. OR, at trial, you can object to him offering any evidence--including testimony--about the inventory. If you know all there is to know, then just let it ride and object to him providing testimony. If you really need the information, then file a motion to compel or enforce. You will need an attorney to do either of those things because the legal requirements are very technical--it's not just a matter of filling out a form or making an oral argument to the judge.
