can a hotel be held responsible for you getting hurt by someone opening a bathroom door as you are leaving and you get slammed in face with hook on door

If the accident was foreseeable, then the hotel may have been negligent which could entitle you to damages. Negligence is very fact specific, however, and often requires the testimony from an expert witness. Expert witnesses can be rather expensive, so your stragegy regarding compensation will be guided to a large extent by the amount of damages you may be able to claim.
