Legal Question in Employment Law in California

I have an employee who has embezzeled cash from our daily collection over the past two months. the employee has admitted to it and agrees to pay the money back. if she does not pay it all back, what are my options? do I have he right to garnish wages, or withhold last paycheck? or allow person to work off the amount owed? any and all info appreciated.

You could enter a contract with her to take part of paycheck, but you can not 'threaten to file criminal charges' as any part of your negotiations. You can file charges, but can't threaten to, or you're committing extortion. If you want legal help in this, feel free to contact me.
